Eggless Vanilla Cupcakes

Ingredients :


1. All purpose Flour - 2 Cups

2. Condensed milk / Milkmaid - 200 ml

3. Sugar - 6-8 Tablespoons

4. Buttermilk - 1/2 Cup

5. Sunflower oil/ Cooking Oil - 8-10 Tablespoons

6. Soda Bicarb - 1/2 Tsp

7. Baking powder - 1.5 - 2 Tsp

8. Vanilla Essence - Few drops

9. Salt - A pinch for taste enhancement


Preparation 

Preheat Oven to 180 Degrees Celsius. Have 2 bowls. In 1 bowl mix all the dry ingredients i.e Flour, Sugar, Soda Bicarb, Baking powder and salt together. In the other bowl mix all the wet ingredients i.e Condensed milk, buttermilk, Oil, Vanilla essence. Now mix the dry ingredients to the wet mixture slowly and blend without any lumps.

Fill in the batter in the cup cakes papercups half full leaving room for the cupcakes to rise. Bake for 25 - 30 mins or until a toothpick inserted comes out clean.

Once the cupcakes are cooled completely, decorate them with ur desired frosting .

Tomato Onion Masala

Ingredients : 

Tomato - 2 Medium

Onion - 2 Medium or 1 Large

Corn ( Optional) - 1 cup

Salt - As reqd

Oil - 2 - 4 Tspoons

Mustard, Jeera and Ajwain seeds - 1 Tspoon each

Ginger garlic paste - 1 tablespoon

Garam masala - 1/2 Table spoon


Preparation:

Cut the Onions and tomatoes into thin slices. In a kadai, add oil and mustard seeds. Once the seeds splutter, add Jeera and ajwain seeds. Then add the onions and fry it till glacious. Then add tomato and fry till the raw smell goes.Now add reqd Water, Salt, Garam masala, Ginger garlic paste and Corn and allow it to cook till the raw smell goes. 

Season with chopped Cilantro. Serve hot.

Masala Aval/Spiced Poha Upma.

Masala Aval/ Spiced Poha upma.

Ingredients :

Aval/Poha - 150 gms

Onion - 1 medium

Tomato - 1 Mediuim

Green peas - 1 cup

Salt - To taste

Cooking Oil, Coconut oil  - 2 teaspoons each

Mustard and Jeera seeds - 1 teaspoon each

Cilantro/Coriander - For seasoning.

Preparation:

First wash and rinse the Poha and drain off the excess water and leave it aside for 5 to 10 mins.




Cut the Onion and Tomato into very thin slices.





In a kadai or vessel add some oil and add mustard seeds. Wait till it splutters. Then add Jeera seeds.





Then add the Onion add fry till light golden brown. Then add the tomato and peas. Add a pinch of salt to the mixture.




Then add the soaked Poha and fry for 2 mins.




Season with chopped Cilantro and some coconut oil.




Serve hot with Garam Masala Chai.
